Sociohistorical analysis of malanga consumption as part of the Afrodescendant identity of Veracruz

In this research, food is analyzed from a structural point as a defining element of identity and, specifically, from the consumption and production of malanga in Veracruz, as part of the identity construction of the Afro-Mexican identity of its inhabitants. In this way, from regional history, the convergence of food with customs, habits and traditions is analyzed, that is, how culture has been reproduced in the ways of cooking and the use of ingredients that have a close relationship with identity. of a historical past that, since miscegenation, maintains an Afro root that has been perpetuated and intermixed to make up the identity of the Veracruz native.
